Today we baked up some Holiday cookies 🙂 ‘Tis the season, after all. Best part is that we got to use so many Amazon review items at once, hence the countless photos being taken. But it was a lot of fun, and definitely a great way to spend our afternoon. We made some rolled sugar cookies, with a simple recipe (to be included.) We had a blast cutting them out and decorating them, I never knew so many things could end up with pink sprinkles everywhere. (Please ignore the missing eggs in the photo shown above.)
We mixed up our dough in our new KitchenAid mixer, which we got from a great per-Black Friday deal. And of course, while the dough was chilling, my little helper decided to clean the beater whilst laying on my lap.
Recipe: cream 1.5c butter with 1 c sugar. Add in 4 eggs, 1 tsp salt, and 1 tsp baking powder. Add in 3 cups whole wheat flour, 2 cups all-purpose flour. Chill dough a minimum of 1 hour (covered) and then roll/knead out onto a heavily floured counter until no longer sticky. Then cut and bake at 400* for 7 minutes.
We rolled out the dough using the incredible adjustable stainless steel rolling pin we posted about previously. I’ve never had such even cookie dough before. I always try my best, but it always looked like a smaller scale of the Egyptian dessert. Between bites of delicious cookie I find burnt cracker cookie bits. But this rolling pin, it got the entire batch to be exactly 10mm tall. I had refrigerated my pin prior to use in hopes it would help with rolling. Everything turned out even, thick, fluffy and delicious. And cleaning it off was a breeze. Unscrewed the ends, removed discs and hand washed under the sink- took less than a minute to get it like new again. I don’t even care that this pin doesn’t have handles, it’s still amazing and easy to use.
Baked up our cookies on the Taylor Commercial silicone baking mats. Didn’t need any grease, the cookies came right off easily. These mats are slightly bigger than my largest cookie sheet, which are the standard small, medium, and large by Wilton. So I may have an excuse to get bigger cookie sheets now, since I already needed new ones anyways.
Mixing up the icing was easy, just 1 cup powdered sugar, 1 tbsp milk and some food coloring, mixed until consistency and color desired. Do wish we could have been more creative in having actual icing tips to use, but I threw most of mine away before we moved due to my wrists having tendonitis, and crushing all my cake decorating dreams; looking at decorating tips was a painful memory of things I could no longer do. But today we made due with having the leftover piping bags I had, cutting off the tips and just going to town. Pink sprinkles were everywhere and you have never seen a kid smile so hard because they colored their own choo choo train.
Don’t judge our zombie cookie cutters, those were Halloween clearance last year and my daughter picked them out for our holiday cookies today.
Our cookie cutters were not a review item, and neither were our dollar tree cooling racks. (Save yourself some money, invest in real cooling racks. these ones are already broken in several places an we just got them around Thanksgiving.-I warned you.)
